After looking into several RPG Maker versions, I discovered RPG Paper Maker, which is technically a 3D game development software but uses 2D sprites to create an environment similar to that of Paper Mario.

I have looked into a number of tutorials and guides for the program, and have decided I will probably be using this for the level design.
An alternative would be expanding on my existing Unity knowledge of animations and triggers to make some form of escape room style level where walls or doors open when you reach the correct area. I would also add creaking or grating noises, partially as a cue so you know the door is opening, but partially to make it more interesting as a whole.
Over the rest of the week (22nd to 26th of March) I will find and follow a number of RPG Paper Maker tutorials/guides to see how easy it is to learn and use, as well as what the software is actually capable of.
I believe I will probably use RPG Paper Maker for the first MVP, and then attempt to recreate what I have made in Unity so I can compare and contrast the two software.
Terrain Design:
If I were to use RPG Paper Maker, I would probably go for an open area, assuming skyboxes and terrain tools were included in the software. This could have trees and
However, if I use Unity I am much more likely to have the game be mostly inside, possibly in some sort of temple or facility with traps and the like. I would use triggers for animations on the doors, and I would probably set timed areas where you had to complete some form of obstacle course before a door closed or platforms stopped moving.

Character Ideas:
I’m not entirely sure what style of main character I am going to go for yet. I could do the simple choice of one story-based character that you are more watching the life of than playing as, such as in Aveyond and Chrono Trigger. I could also choose an option of slightly more freedom, where a player gets to pick their name and gender/appearance, such as in Pokemon. The most complicated option – one I will likely not use, but is still worth mentioning – is a completely customizable character, which is not often seen in RPGs (at least the ones that I know of).
As I am planning on basing this part of the storyline in the realm of the [TBC] (Mammal-like Humanoids), I would have
